Cantaloupe and mint Gazpacho!

2 Cups of chopped Cantaloupe
1/2 Cup of cucumber seeded and chopped
1 Heaping Tbsp red onion chopped
1 Tbsp of fresh mint leaves
1/4 Cup of good quality Extra virgin Olive oil
1/3 cup of water

Sea salt, fresh cracked black pepper to taste

Blend all the above without the Olive oil. Once the veggies are blended, slowly strain the oil in till the mixture looks shiny and well blended. Chill for atleast 3-4 hrs before serving. Garnish with mint leaves before serving.
